3 Favorite Fall Recipes (with a Cool Twist!)

Autumn is arriving, but hot weather is sticking around in many places. These comforting dishes will give you all the fall vibes while a cool twist helps you beat the heat.

For breakfast: Frozen Berry Oatmeal Bowl

Oats offer filling goodness, and frozen berries are a cool sweet treat. Ingredients 1/2 cup rolled oats 3/4 cup milk Pinch of salt 1/3 cup frozen berries (blueberries, raspberries, or blackberries) Toppings of choice (We love almond butter, chia seeds, and flaked coconut.) Directions  1. Add oats, milk, and salt to a pot and stir to combine.  2. Bring the mixture to a gentle boil over medium heat, then reduce heat to simmer.  3. Simmer for 3-4 minutes or until liquid is mostly absorbed and oats are creamy.  4. Transfer to a bowl and add frozen berries and any desired toppings.

For dinner: Chili with Creamy Avocado 

Classic chili gets cooled down with slices of fresh avocado. Ingredients For the chili1 pound ground beef 1 small white onion, diced 3 (15 oz.) cans diced tomatoes with green chiles 2 (15 oz.) cans kidney beans, drained 2 tablespoons chili powder 2 ripe avocados Toppings (optional): chopped cilantro, cheese, lime juice Directions For the chili 1. In a large stockpot, cook ground beef over medium-high heat until browned. Transfer to a plate, reserving one tablespoon of the grease.  2. Saute the onion in the grease for 4-5 minutes or until soft.  3. Add diced tomatoes, kidney beans, chili powder, and browned beef to the stockpot. Bring to a boil, then reduce heat, cover, and allow to simmer for 10 minutes.  4. Transfer to bowls and top with sliced avocado.

For dessert: Apple Crumble à la Mode 

This homemade apple crisp is heavenly paired with vanilla ice cream. It’s the perfect fall treat! Check out our mini version here. Ingredients For the apple filling2 medium apples, cored, peeled, and cut into 1 inch pieces 1 tablespoon sugar 1 teaspoon butter 1/2 teaspoon vanilla extract 1/4 teaspoon cinnamon For the crumble topping3 tablespoons butter, chilled and cut into cubes 2 tablespoons light brown sugar 5 tablespoons flour 2 tablespoons chopped walnuts 1/4 teaspoon cinnamon 1/4 teaspoon nutmeg Directions For the apple filling 1. Preheat oven to 375 degrees.  2. In a saucepan, melt the butter over medium heat.  3. Add the apple, sugar, vanilla, and cinnamon and cook over medium-low heat until softened, stirring occasionally, about 10-15 minutes.  4. Remove from heat and divide mixture into two medium-sized ramekins. For the crumble topping 1. In a small bowl, combine the chilled butter, brown sugar, flour, and spices. Cut in the butter with a fork until a crumble is formed.  2. Add the walnuts to the mixture and stir to combine.  3. Top the ramekins of apple filling with equal portions of the crumble. Bake at 350 degrees for 15 minutes or until golden.  4. Serve warm with a scoop of vanilla ice cream and a drizzle of honey. Cool down classic cozy dishes with these cool twists.
