4 Ways to Spice Up Grilled Corn

Nothing screams “grill season” more than corn. Fresh, juicy, and bursting with flavor, this summer staple is our go-to side dish for cookouts and casual dinners. While you can never go wrong with butter and salt, summer has us feeling a bit more adventurous. So we’re adding a little twist to corn on the cob with bold flavors like honey sriracha and bacon cheddar ranch. Give these combos a try (and experiment with your own) the next time you fire up the grill. They just might steal the spotlight from burgers and hot dogs! As for whether to eat around or across the cob? We’ll leave that up to you.  

GRILLED CORN

Husks on, wrapped in foil, butter first, butter after... it’s a choose-your-own adventure when it comes to grilling technique. Since we’re all about keeping things simple, we opt for placing fresh corn, husks off, directly on an open grill on medium-high. Rotate every 2-3 minutes until the ears are evenly cooked, about 10-12 minutes. We like a light char for a smoky, nutty flavor that perfectly complements any topping.  

BACON CHEDDAR RANCH

Ingredients
  • 4 ears grilled corn
  • ½ packet ranch seasoning
  • ¼ cup (½ stick) melted butter
  • 1 cup shredded cheddar
  • 4 slices bacon, cooked and crumbled
  • Chopped chives
  • Ranch dressing
Directions
  1. Whisk ranch seasoning into melted butter and brush onto corn.
  2. Roll ears in shredded cheddar.
  3. Drizzle with ranch and top with a sprinkle of bacon and chives.

BBQ CRUNCH

Ingredients
  • 4 ears grilled corn
  • ½ cup barbecue sauce
  • ½ cup potato chips, crushed
Directions
  1. Evenly coat corn with barbecue sauce.
  2. Hand crush potato chips in a bowl and sprinkle on corn.

HONEY SRIRACHA

Ingredients
  • 4 ears grilled corn
  • ¼ cup (½ stick) melted butter
  • 1 tablespoon honey
  • Sriracha to drizzle
  • Chopped scallions
Directions
  1. Whisk honey into melted butter and brush on corn.
  2. Drizzle with sriracha.
  3. Garnish with scallions.

CINNAMON SUGAR

Ingredients
  • 4 ears grilled corn
  • ¼ cup (½ stick) melted butter
  • 2 tablespoons cinnamon
  • ½ cup sugar
  • ½ teaspoon cayenne
  • Flaky sea salt
Directions
  1. Brush corn with melted butter.
  2. Mix cinnamon, sugar, and cayenne, then evenly coat corn with the mixture. We like to use a small sieve to get an even spread.
  3. Garnish with sea salt.
