Bacon, Butternut Squash, and Quinoa Soup Recipe

Bacon, Butternut Squash, and Quinoa Soup


2-3 Tablespoons Olive Oil
6 Strips of Bacon, Cut into Bite-Sized Pieces
1 Onion, Diced
3-4 Garlic Cloves, Minced
2-3 Cups Cubed Butternut Squash
1-2 Teaspoons Cumin
1 Teaspoon Chili Powder
1-2 teaspoons oregano
1 Teaspoon Smoked Paprika
Salt & Pepper to Taste
1 14.5 oz Can Diced Tomatoes
4 Cups Chicken Broth
1/2 Cup Quinoa
3 Cups Fresh Spinach

3. Add the butternut squash and all of the spices. Stir everything together and cook for about 2-3 minutes.


4. Add the quinoa, diced tomatoes, and chicken broth and give everything a stir.

5. Cover the pot and let everything simmer on medium-low heat until the butternut squash softens up (30-40 mins).

6. When soup is done, toss in the spinach, remove from heat, and serve.
