Cure the “Winter Blues” With a Three-Course Rainbow Holiday Dinner 

Winter is officially upon us. With more grey skies and shorter days, it’s easy to feel all cooped up. At Shipt, we like to shake off those so-called “winter blues” by eating some fresh and colorful dishes. This three-course rainbow holiday dinner is one of our favorites. It’s not only packed with bold colors, but also rich and delicious flavors that are sure to brighten even the dreariest of winter days. The holidays are packed with heavy and sugary foods, so these recipes are the perfect healthy switch-up to keep you feeling light and merry all season long as you celebrate! 

Three-Course Rainbow Holiday Dinner 


Rainbow Roasted Veggies

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots
  • 1 cup brussel sprouts 
  • Sweet potato
  • Red onion
  • Beet
  • 1/4 cup olive oil
  • Salt
  • Pepper
  • Basil

Flavorful Foil Wrapped Salmon

  • Salmon fillets
  • Asparagus
  • Garlic cloves
  • Lemons
  • Olive oil 
  • Salt

Triple Berry Layer Cheesecake

  • 16 graham crackers
  • 1/2 cup granulated sugar
  • 8 tbsp butter
  • 2 gelatin packets
  • 1/3 cup water
  • Philadelphia cream cheese
  • 1/2 cup creme fraiche
  • Strawberry jam
  • Blueberry jam
  • Blackberry jam


Rainbow Roasted Veggies

Line baking sheet with parchment paper and set aside. 

Use knife to slice red and yellow bell peppers, carrots, brussels sprouts, sweet potato, red onion and beet. 

Place veggies in separate groups on baking sheet to form “rainbow” and then sprinkle with olive oil, salt and pepper. 

Bake at 450°F for 35 minutes. 

Remove from heat and sprinkle basil over top, then bon appétit! 

Flavorful Foil Wrapped Salmon

Place salmon fillet on sheet of heavy-duty aluminum foil and dress with garlic cloves, lemon slices and asparagus. 

Drizzle with olive oil, then sprinkle salt and pepper over top. 

Fold aluminum foil to seal salmon fillet and place on a baking sheet, then repeat process for remaining fillets. 

Bake at 425°F for 15-20 minutes. 

Remove from heat and aluminum foil to serve, and enjoy! 

Triple Berry Layer Cheesecake

Place graham crackers, sugar and butter in food processor and blend to create mixture, then set aside. 

In a bowl, mix together gelatin and water and soak. 

In a separate bowl, combine Philadelphia Cream Cheese along with gelatin mixture and also creme fraiche. 

Use hand mixer to blend together until cream cheese mixture reaches soft-peak consistency. 

Divide cream cheese mixture into three equal parts and combine each part with either strawberry jam, blueberry jam or blackberry jam, respectively. 

Mix each jam with cream cheese mixture until smooth and combined, then pour each new mixture into its own piping bag. 

Grab graham cracker mixture and pack into dessert rings to create cheesecake base. 

Pipe strawberry cream cheese over graham cracker base, then repeat process with blueberry cream cheese and blackberry cream cheese to create additional layers. 

Place cheesecakes in refrigerator for 4 hours. 

Sprinkle additional graham cracker crumble over top and enjoy!
