Fresh Herbs Everyday Hack

We’ve all been there. You buy fresh herbs with every intent to use them but before you know it, two weeks have flown by and your herbs are no good. There’s a hack for that. By freezing your herbs in olive oil, you can preserve these little flavor bombs for the moment you need them. Nothing makes a meal taste more vibrant than fresh herbs like rosemary and thyme. With this fun herb hack, you’ll never waste thyme worrying about fresh herbs again!

Ingredients

Ice Cube Herbs

  • 1 bunch thyme, chopped
  • 1 bunch rosemary, chopped
  • 16 oz olive oil

Baked Feta

  • 1 cup feta, crumbled
  • 3 sundried tomatoes, diced
  • 3 olives, diced
  • 3 jalapeños, diced
  • Salt and pepper, to taste

Cranberry One Pan Chicken

  • 1/2 cup cranberries
  • 2 tbsp soy sauce
  • 3 tbsp maple syrup
  • 1/4 cup dry white wine
  • 3 garlic cloves
  • 6 chicken thighs
  • 1 delicata squash, sliced
  • 1/2 cup cranberries
  • 1 orange, sliced
  • Salt, to taste

Directions

Ice Cube Herbs

  1. In an empty ice cube tray, add thyme to one half and rosemary to the other, then fill the tray with olive oil. Freeze for 3-4 hours before using for the following recipes.

Baked Feta

  1. In a cast iron skillet, combine feta, sundried tomatoes, olives and jalapeños, mix ingredients together and add salt and pepper.
  2. Place one frozen rosemary ice cube and two thyme ice cubes into the feta mixture.
  3. Bake at 400ºF for 15-20 minutes and serve with a toasted baguette or crackers for dipping!

Cranberry One Pan Chicken

  1. In a food processor, combine cranberries, soy sauce, white wine and garlic to make the marinade.
  2. Place the chicken thighs on a baking sheet and cover with marinade, let the chicken marinate for 30 minutes.
  3. Add delicata squash, cranberries and orange to the baking sheet and sprinkle with salt.
  4. Nestle two rosemary cubes and two thyme cubes on the pan and coat chicken with maple syrup.
  5. Bake at 375ºF for 20-25 minutes and enjoy!
