From the Shipt Kitchen: Tostitos Scoops Appetizers Two Ways

Summer has officially arrived! Whether you’re hosting friends from the neighborhood or bringing appetizers to the family picnic, make your summer soiree twice as nice with these easy, loaded Tostitos Scoops. We couldn’t decide between our favorite flavors so we’re sharing both – whether you like fresh avocado, cucumber, tomato salsa or prefer delicious bite-sized jalapeno poppers, there’s bound to be a favorite for everyone. Just make sure you grab a few for yourself before they’re gone!

Jalapeño Popper Scoops

Ingredients

  • 3 jalapenos, seeded and diced
  • 8 oz cream cheese
  • ½ cup sour cream
  • ½ cup chopped green onion
  • 1 cup pepper jack cheese
  • ½ cup sharp cheddar cheese
  • 1 cup crumbled bacon
  • Salt and pepper to taste
  • 24 Tostitos Scoops

Directions

  1. Preheat oven to 350℉.
  2. Line a baking sheet with parchment paper and set aside.
  3. In a medium bowl, stir together cream cheese, sour cream, green onions, jalapeños, bacon, pepper jack and cheddar cheese.
  4. Spoon filling into Tostitos Scoops – about a teaspoon each.
  5. Top with additional bacon and cheddar cheese if desired.
  6. Bake for 8-10 minutes or until filling is bubbly and cheese is melted.

Avocado, Cucumber, Tomato Salsa Scoops 

Ingredients

  • 1 cup chopped cherry tomatoes
  • 1 cup chopped cucumber
  • 1 avocado, diced
  • ½ cup red onion
  • ¼ cup chopped fresh cilantro
  • 1 lemon
  • 1 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 24 Tostitos Scoops

Directions

  1. In a medium bowl, add chopped tomatoes, cucumber, avocado, red onion, and cilantro.
  2. Squeeze lemon, drizzle olive oil, and sprinkle salt and pepper – mix together.
  3. Spoon filling into Tostitos Scoops – about a teaspoon each. Serve and enjoy!
