Healthy Food Swaps

Ingredients

Banana Pancakes

  • 2 cups rolled oats
  • 2 bananas
  • 1 cup almond milk
  • 1 egg
  • 1 tsp vanilla
  • 1/8 tsp salt
  • 1/2 tsp cinnamon
  • 1 tbsp baking powder
  • 1 tbsp butter

Buffalo Cauliflower Wings

  • 1 head cauliflower, cut into florets
  • 1 cup water
  • 3/4 cup all-purpose flour
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1/4 tsp salt
  • Buffalo sauce

Portobello Sliders

  • 8 small portobello mushrooms
  • 1/2 tbsp tamari
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 8 slider buns
  • American cheese
  • Tomatoes, sliced
  • Arugula
  • Avocado, sliced
  • Pesto

Directions

Banana Pancakes

  1. In a blender, combine rolled oats, bananas, almond milk, egg, vanilla, salt, cinnamon and baking powder. Blend until the batter is smooth.
  2. Melt butter in a large frying pan, then pour the batter into the pan to form pancakes.
  3. Cook the pancakes on medium heat for 2-3 minutes on each side.
  4. Sprinkle with powdered sugar or cover with maple syrup and eat up!

Buffalo Cauliflower Wings

  1. In a large bowl, whisk together water, flour, onion powder and garlic powder.
  2. Dip each of the cauliflower florets into the flour mixture and place on a baking sheet, then bake at 450ºF for 20-25 minutes.
  3. Remove from oven. One at a time, dip the cauliflower “wings” in buffalo sauce and place them back on the baking sheet.
  4. Bake the “wings” at 450ºF for an additional 20 minutes.
  5. Serve with a side of ranch or eat plain!

Portobello Sliders

  1. In a bowl, combine tamari, olive oil and balsamic vinegar to create a marinade.
  2. Pour the marinade over the mushrooms and soak well.
  3. Grill the mushrooms for 5-7 minutes on each side.
  4. Place mushrooms on a slider bun, then top with American cheese, tomato, avocado, arugula and pesto, and enjoy!
