Healthy Food Swaps for Summer

We’re always looking for fresh ways to make the most of summer, and that includes the food we eat. These summer recipes offer a new spin on classics you know and love (buffalo chicken wings, anyone?) with healthy ingredients swapped in to leave you feeling good. Whether you’re craving breakfast, lunch or dinner, these recipes won’t slow you down or mess up that summer beach bod. Now get outside and enjoy the day!

Healthy Food Swaps


Banana Pancakes

  • 2 cups rolled oats
  • 2 bananas
  • 1 cup almond milk
  • 1 egg
  • 1 tsp vanilla
  • 1/8 tsp salt
  • 1/2 tsp cinnamon
  • 1 tbsp baking powder
  • 1 tbsp butter

Buffalo Cauliflower Wings

  • 1 head cauliflower, cut into florets
  • 1 cup water
  • 3/4 cup all-purpose flour
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1/4 tsp salt
  • Buffalo sauce

Portobello Sliders

  • 8 small portobello mushrooms
  • 1/2 tbsp tamari
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 8 slider buns
  • American cheese
  • Tomatoes, sliced
  • Arugula
  • Avocado, sliced
  • Pesto


Banana Pancakes

  1. In a blender, combine rolled oats, bananas, almond milk, egg, vanilla, salt, cinnamon and baking powder. Blend until the batter is smooth.
  2. Melt butter in a large frying pan, then pour the batter into the pan to form pancakes.
  3. Cook the pancakes on medium heat for 2-3 minutes on each side.
  4. Sprinkle with powdered sugar or cover with maple syrup and eat up!

Buffalo Cauliflower Wings

  1. In a large bowl, whisk together water, flour, onion powder and garlic powder.
  2. Dip each of the cauliflower florets into the flour mixture and place on a baking sheet, then bake at 450ºF for 20-25 minutes.
  3. Remove from oven. One at a time, dip the cauliflower “wings” in buffalo sauce and place them back on the baking sheet.
  4. Bake the “wings” at 450ºF for an additional 20 minutes.
  5. Serve with a side of ranch or eat plain!

Portobello Sliders

  1. In a bowl, combine tamari, olive oil and balsamic vinegar to create a marinade.
  2. Pour the marinade over the mushrooms and soak well.
  3. Grill the mushrooms for 5-7 minutes on each side.
  4. Place mushrooms on a slider bun, then top with American cheese, tomato, avocado, arugula and pesto, and enjoy!
