My is an expert at concocting healthy alternatives of beloved dishes that are simple and delicious. One of her favorite go-to recipes – that are perfect for those crazy weeknights – are juicy veggie cheesesteak sliders. These hearty sandwiches pass on the heavy steak, and instead call for succulent portobello mushrooms for a burst of fresh flavor. Paired with some grilled peppers and sandwiched between Hawaiian rolls, these sliders perfectly balance savory to sweet. Best part? The pull-apart rolls let everyone have their own bite-sized taste!
And there you have it – My’s Famous Veggie Cheesesteak Sliders. This delicious recipe is a quick and easy way to spruce up your dinner with veggies! Next time you’re in a pinch, whip up these sliders in under 20 minutes and quickly have a healthy dish on your kids’ plates.
- 12 sweet Hawaiian rolls
- 8 portobello mushrooms, sliced
- 8 provolone cheese, sliced
- 2 green peppers, sliced
- 2 red peppers, sliced
- 3 tbsp butter, melted
- 1 1/2 tbsp sea salt
- 1 tbsp black pepper
- 1 tbsp garlic powder
- 1 tbsp oregano
- Avocado oil
- Add avocado oil in a hot pan and bring to smoke point, then add portobello mushrooms.
Tip from My: Use a hot pan and high smoke point oil such as avocado oil when cooking mushrooms, this way you can sear the mushrooms without releasing too much of the juice.
- Sprinkle 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic powder and 1/2 tsp oregano over mushrooms, then cook for 1-2 minutes on each side and remove from pan.
Tip from My: When cooking mushrooms, add the salt at the very end so that no more juice escapes the mushrooms.
In a separate pan, heat avocado oil and add sliced red and green peppers.
Season with remaining salt, pepper, garlic powder and oregano, then cook for 8 minutes.
Slice Hawaiian rolls in half and place bottom of rolls in an oven dish.
Spread 2 tbsp melted butter on the inside of rolls, then layer provolone cheese slices, peppers, and mushrooms.
Top with other half of Hawaiian rolls, then spread remaining melted butter and sprinkle with salt.
Bake sandwiches at 300ºF for 15 minutes.
