“Nacho” Average Party Platter

Congratulations Class of 2019! Graduation season brings family gatherings, and family gatherings mean trying to please many different tastes. You know what everyone likes? Nachos – with three types of nachos all on one party-pleasing platter, this recipe has something for everyone. This is hosting made easy, with melted cheese, a little spice and crispy bacon – nachos are the perfect way to tell your graduate “hey, we’re really proud of you!”

Party Plate Nachos Three Ways

Ingredients

Loaded Potato Nachos

  • 1 1/2 lb russet potatoes
  • 1/2 tsp rosemary
  • 1/2 tsp thyme
  • Cheddar cheese, shredded
  • Cooked Italian sausage
  • Green onion, sliced
  • Sour Cream
  • Pico de gallo
  • Cooked bacon, chopped
  • Salt and pepper, to taste
  • Olive oil

Spicy Vegetable Nachos

  • Tortilla chips
  • Cheddar cheese, shredded
  • Bell peppers, diced
  • Black beans
  • Red onions, diced
  • Jalapenos, diced
  • Guacamole
  • Crema

Mediterranean Nachos

  • Pita chips
  • Monterey Jack cheese, shredded
  • Cooked chicken, shredded
  • Red onions, diced
  • Artichoke hearts, cut into fourths
  • Black olives, diced
  • Feta cheese
  • Hummus
  • Parsley

Directions

Loaded Potato Nachos

  1. Slice the potatoes thinly, with a knife or mandolin, and toss in olive oil until coated.
  2. Spread the potatoes across a baking sheet lined with aluminum foil and sprinkle with rosemary, thyme, salt and pepper.
  3. Bake at 450°F for 20-25 minutes, until golden brown.
  4. Layer cheddar cheese and sausage over the baked potato slices, as desired, then top with green onions.
  5. Bake at 350ºF for 15 minutes, until cheese is melted.
  6. Finish your loaded potato nachos with sour cream, pico de gallo and bacon, and enjoy!

Spicy Vegetable Nachos

  1. Spread tortilla chips across a baking sheet lined with aluminum foil.
  2. Layer the chips with cheddar cheese, bell peppers, red onions, black beans and jalapeno, as desired.  
  3. Bake at 350ºF for 15 minutes, until cheese is melted.
  4. Top with guacamole and crema, and serve!

Mediterranean Nachos

  1. Spread pita chips across a baking sheet lined with aluminum foil.
  2. Layer Monterey Jack cheese, chicken, red onion, artichokes, and black olives over chips, as desired.
  3. Bake at 350ºF for 15 minutes, until the cheese is melted
  4. Top with feta cheese, hummus and parsley – serve warm, gather round, and enjoy!

Tip: Create the ultimate nacho party platter by preparing all three nachos on a single baking sheet and then bake at 350ºF for 15 minutes. Add respective toppings and they’re ready for the party!
