3 Healthy Food Swaps to Eat Better in 2020

Ingredients

Turkey Burger with Sweet Potato Buns
1 1/2 lbs ground turkey
1/2 tsp garlic
1 sweet potato
Tomatoes
Lettuce
Avocado
Sea salt
Pepper

Broccoli Cheddar Hash Brown Cups
Carrots, shredded
Sweet Potato, shredded
Broccoli, chopped
Eggs
1/2 cup cheddar cheese
Mushrooms
Onion
Spinach
Salt
Pepper

Butternut Squash Chicken Nuggets
2 cups ground chicken
2 cups butternut squash
2 cups carrots
1 cup coconut flour
2 tbsp coconut oil
2 green onion sprigs
1 tbsp garlic powder
1 tsp chili powder
Flour
Egg wash
Panko bread crumbs
Salt

Directions

Turkey Burger with Sweet Potato Buns
1. In a bowl, season ground turkey with garlic, pepper and sea salt. Mix thoroughly.
2. Form four patties and place on parchment-lined baking tray.
3. Cut sweet potatoes in 1/2 inch thick rounds and add to baking tray.
4. Bake at 450°F for 18 minutes.
5. Assemble burgers using tomato slices, avocado, lettuce and other desired toppings.

Broccoli Cheddar Hash Brown Cups
1. In a bowl, combine carrots, sweet potato, broccoli and cheddar cheese.
2. Sprinkle salt and pepper over top, then use spoon to mix ingredients evenly.
3. Divide mixture evenly and pack tightly into standard muffin tin.
4. Bake at 450°F for 20 minutes.
5. Top with your choice of mushrooms, onion, spinach or other toppings, then crack an egg over each next.
6. Sprinkle cheddar cheese, pepper and salt over top, then bake again at 350°F for 15 minutes.
Remove from oven to cool and enjoy!

Butternut Squash Chicken Nuggets
1. In a bowl, mix ground chicken, butternut squash, carrots, coconut flour and coconut oil.
2. Add chopped onion, salt, garlic powder and chili powder and mix thoroughly with spoon.
3. Place flour, egg wash and panko bread crumbs in three separate bowls.
4. Grab a scoopful of chicken mixture and use hands to mold into a nugget, then dip the nugget into each of the three bowls (flour, egg wash, panko) to bread it.
5. Place breaded nuggets on a parchment-lined baking sheet.
6. Bake at 400°F for 25 minutes.
7. Serve with honey mustard, barbecue sauce or your favorite dip and enjoy!
