Pumpkin Spice Latte Overnight Oats

Pumpkin Spice Latte Overnight Oats

Ingredients 

1 can pureed pumpkin

2 cups rolled oats

1 can coconut milk

1/2 cup non-dairy yogurt

1 tablespoon pumpkin spice blend

2 tablespoons brown sugar

Hot fresh coffee, to serve

Directions 

 1. In a large mixing bowl, add all ingredients and mix until combined.

 2. Divide equal portions of the mixture into separate jars, securing with a lid. Chill overnight.

 3. When ready to serve, add a splash of fresh coffee and stir to combine.

 4. Add your favorite toppings. Sliced bananas, toasted nuts, or chocolate chips are all amazing!
