SOBE FEST: A FIT Quinoa Salad with Edamame and Feta

We’re leaving for Miami! South Beach Food and Wine Festival, here we come!

At the festival, we’ll be hanging out at the Badia Spices Fun and Fit event asking people an essential question… Are you FUN or FIT?

We talked about what we think FUN is like last time. Today, we tackle the FIT.
FIT is clean, fresh, seasonal and wholesome. It’s satisfying and energizing while always beautiful. Take a forkful to the salad below, and let us know if you agree!

So… Are YOU fun or fit?

Quinoa Salad with Edamame and Feta

Ingredients

2 cups frozen, shelled edamame, blanched
2 cups quinoa, cooked
1/2 cup crumbled Feta
2 tablespoons extra virgin olive oil
1 tablespoon champagne vinegar
Salt, to taste
Freshly ground black pepper, to taste
Handful fresh basil leaves, for garnish

Combine all ingredients, except for basil, in a large mixing bowl. Toss gently until everything is well incorporated. Garnish with fresh basil leaves to serve.
