Green Goddess Quinoa Salad

Ingredients

Salad

1 cup quinoa, cooked and cooled

½ cup sweet peas, lightly steamed

1 cup mixed vegetables, chopped (such as cherry tomatoes and zucchini)

½ cup mozzarella pearls

2 tablespoons chives, chopped

Salt and pepper, to taste

Green Goddess Dressing

½ cup Greek yogurt, plain and unsweetened

¼ cup basil

¼ cup cilantro

½ avocado

1 small garlic clove

2 tablespoons lemon juice

Water, to thin

Directions

 1. Combine quinoa, sweet peas, and mixed vegetables in a large bowl.

 2. In a blender, combine Greek yogurt, basil, cilantro, avocado, garlic, and lemon juice. Add water 1 tablespoon at a time until dressing is smooth and creamy.

 3. Pour dressing over salad and stir to combine. Top with mozzarella and chives. Add salt and pepper, to taste.
