4 cups arugula

2 cups cubed watermelon

½ cup basil

½ cup mint

⅓ cup crumbled feta cheese

Honey Vinaigrette

3 tablespoons olive oil

1 tablespoon red wine vinegar

1 teaspoon honey

Salt and pepper to taste


 1. Add arugula, watermelon, basil, mint, and feta to a large bowl.

 2. In a separate small bowl, whisk together olive oil, vinegar, honey, and a pinch each of salt and pepper.

 3. Toss salad with vinaigrette and serve immediately.
