As a child, Madison loved the smell of the kitchens where her father worked as a traditional Southern chef. He used his skills to bake with her and her sisters. This recipe (her sister’s favorite) was perfected by him in the 90s, and at least two pies can be found cooling in his kitchen for the holidays.
Southern Buttermilk Pie
Ingredients:
1½ cups (3 sticks) lightly-salted butter, softened
1⁄2 cup (4 oz) granulated sugar
3 eggs
1/2 tbs. all-purpose flour
1⁄2 cup (4 oz) whole buttermilk
1 tsp vanilla extract
1⁄4 tsp coconut or almond extract
1 9-inch pie shell
Optional: 1 tsp brandy or cognac
Directions:
1. Cream together the butter and sugar (by hand whisk, vigorously for about 5 minutes or with a medium-low speed electric mixer for about 3 minutes).
2. One after the other, add 1 egg at a time and a little flour until well incorporated with creamed sugar. Fold in buttermilk, adding the vanilla extract, etc. and any other flavoring.
3. Pour mixture into a 9-inch deep-dish pie shell.
4. Bake in a pre-heated 340° oven until set for 45 – 60 minutes.
