- Where skin contact is promoted through frequent pump-overs. As fermentation reaches it final stages
- The frequency of pumping overs is reduced & the final blend takes place once fermentation has finished. Finished wine is then transferred to medium-toast
- Two-year-old barrels for malolactic fermentation and a total aging time of three months. The wine is lightly fined before bottling
