The Vitiano Rosso represents an innovative Italian red blend comprising of the varieties commonly found along the Tuscan hillsides: Sangiovese, Merlot & Cabernet Sauvignon. Merlot is typically harvested first, towards the beginning of September, followed by Cabernet & Sangiovese during the second half of the month. The three varietals are vinified separately and after crushing and destemming, grapes are fermented in stainless steel tanks between 25-28°C, where skin contact is promoted through frequent pump-overs. As fermentation reaches it final stages, the frequency of pumping overs is reduced & the final blend takes place once fermentation has finished. Finished wine is then transferred to medium-toast, two-year-old barrels for malolactic fermentation and a total aging time of three months.
