Poggerino's Chianti Classico Nuovo comes from Radda in Chianti and the careful nurturing of Piero Lanza, owner and winemaker. The process begins with the careful destemming and pressing of hand-selected grapes from the vineyard. Alcoholic fermentation, initiated without the use of selected yeasts, unfolds at a controlled temperature of 28°-30°C in concrete tanks. The entire vinification and maceration process takes approximately 35 days, incorporating pump overs and manual punch downs. What is unique about this wine is how it is aged: post-maceration, in December, the nascent wine is transferred to a unique cement egg of 6.5hl, where malolactic fermentation gracefully takes place. After aging for 12 months, the wine is thoughtfully bottled and undergoes a minimum of 8 months of maturation before it reaches enthusiasts.
