Rogue is our flagship espresso. For this blend, we focus yearround on sourcing coffees with a ton ofnatural sweetness, full body, and delicate not overwhelming acidity. Sourcing carefully with espresso in mind allows us to produce a balanced, userfriendly espresso without needing to roast too dark. A shot of Rogue should taste like berry jam and melted chocolatewith a lastingclean finish. To prepare Rogue as a double shot of espresso, finely grind 1718 grams of coffee. Add to the portafilter, making a level bed of coffee and then tamping it down. Insert the portafilter and pull your shot until 34  36 grams of liquid espresso has been produced. Stir and drink right away, or combine with steamed milk. You can also enjoy Rogue as a drip coffee using your favorite machine or pour over method. We recommend 36 grams of mediumfine ground coffee per 20 oz 590 ml of water.
