Carrot + Black Bean Hummus Pots
We fell in love with this Pinterest hit! These carrot patch pots meet our qualifications for a recipe win: cute, easy to execute, and healthy.
6-8 Mini flower pots, washed and dried
Parchment paper or foil, cut into 1” rounds
1 bag baby carrots
1 bunch curly parsley
Poke a hole into one end of baby carrots. Pinch sprigs of parsley and insert sprig into carrots as carrot tops.
Black Bean Hummus
1 15 oz. can black beans, drained and rinsed
1 garlic clove
2 tbsp olive oil
Juice of ½ lime
¾ tsp ground cumin
Salt & fresh-ground pepper
Pinch of paprika
Combine all items into a food processor and pulse until blended.
Line bottom of flower pots with foil or parchment paper rounds to prevent spills. Scoop hummus into each pot until ⅔ full. Garnish with baby carrots and lightly dust with fresh ground pepper as “dirt.”
Carrot Peanut Butter Dog Treats
Reward your furry friends with homemade dog treats that are simple to whip up from ingredients that are already stocked in your pantry. Feel good knowing that these flavor-packed treats are made with minimal ingredients and love (free of preservatives or additives!).
¾ c whole wheat flour
1 c grated or chopped carrots
1 fresh banana, peeled and mashed
¼ c unsweetened applesauce
¼ c all-natural peanut butter
Preheat oven to 350 degrees and line baking sheet with parchment paper. In a medium bowl, mix together wet ingredients until combined.
Mix flour into wet mixture until dough forms. Flour your work surface. Roll out dough to 1/4” thickness and cut out shapes with cookie cutters. Place biscuits on baking sheet and bake for 22-23 minutes or until golden brown. Once crisp, remove and let cool completely. Share with your canine friend!
