A fun and full day with the kids

Unprecedented times have sent children home from school, and all of us spending a lot more time indoors. Just because we’re stuck inside doesn’t mean we can’t come up with great activities for our kids that teach, engage and let us spend quality time together.  

First, get your hands dirty making your own indoor mini garden. Then, cook up your own homemade pasta like an Italian chef. And the end the day with a delicious and nutritious one-pot pasta using your own home-grown herbs and hand-crafted pasta. Make the most of your time at home with these do-it-yourself projects that you and the kids will love! 

What you need:

Indoor Mini Garden

  • Shoebox
  • Scissors
  • Plastic wrap
  • Potting mix
  • Fresh herbs

Homemade Pasta

  • 2 cups flour
  • 1/2 tsp salt
  • 3 eggs
  • Flour

One-Pot Pasta 

  • 2 1/2 cups boiling water
  • Homemade pasta
  • 2 cups snap peas
  • 1 1/2 cups half and half
  • 1 cup water
  • 1 clove garlic
  • Sea salt
  • 2 cups parmesan cheese
  • Fresh herbs

Directions

Indoor Mini Garden

1. Use scissors to cut a rectangle shape out of the top of shoebox. Remove excess cardboard. 

2. Place sheet of plastic wrap on the bottom of the box to create soil liner. 

3. Fill plastic-lined box two-thirds full with potting mix. 

4. Gently plant fresh herbs into soil, adding more potting mix as needed to secure. 

5. Take great care of your new herb garden! 

Homemade Pasta

1. Add flour, salt and eggs into food processor and pulse to combine. 

2. Pour mixture into bowl and use hands to roll dough into a tight ball. Wrap ball in plastic wrap and let rest for 30 minutes. 

3. On floured surface, flatten dough into two large strips using rolling pin. Using a knife, slice flattened doughs longways to create smaller strips of pasta. 

4. Hold on to these, as you’ll need them for our next recipe below! 

One-Pot Pasta

1. Bring water to a boil in saucepan. 

2. Add snap peas to boiling water for 30 seconds, then remove using slotted spoon or strainer and set aside. 

3. Add homemade pasta to boiling water for 8-14 minutes until al dente. Drain pasta and set aside. 

4. On low heat, combine half and half, garlic and sea salt in a saucepan. Add homemade pasta, snap peas and parmesan cheese. Stir well until cheese is melted and ingredients are blended. 

5. Top with fresh herbs from your mini garden, and bon appétit!
