Easy Lunchbox Recipes for Kids – Around the World Pasta Salads and Crêpes 101

Around the World Pasta Salads


Ginger Asian Noodle Medley

  • 1/2 box udon noodles
  • 1 1/4 cup frozen Asian medley vegetables
  • 2/3 cup ginger dressing
  • 2 tsp lime juice
  • 2 cups rotisserie chicken, shredded
  • 3/4 cup grape tomatoes, halved
  • 1/2 cup baby corn
  • 1/2 cup cilantro, chopped
  • Toasted sesame seeds for garnish

Mamma Mia Pasta Salad

  • 1 box tortellini
  • 1 cup classic baby mozzarella balls, drained
  • 8-12 slices salami, chopped
  • 3/4 cup grape tomatoes, halved
  • 1/2 zucchini, diced
  • 1 cup steamed broccoli, chopped
  • 1/2 cup sweet peppers, sliced
  • 1/3 cup Italian dressing

Ginger Asian Noodle Medley

1. In a large pot, cook noodles for 10-12 minutes or until tender, then strain.

2. Pour the frozen vegetables into a large saucepan, and cook for 4-6 minutes, until crispy and tender.

3. In a large bowl, combine the noodles, vegetables, lime juice, ginger dressing, chicken, tomatoes, corn, and cilantro until well mixed.

4. Top with sesame seeds and serve with a bag of crispy chow mein noodles or seasoned seaweed on the side!

Fun Tip: No time for noodles? Substitute butter lettuce or a red pepper tortilla so they can create their own Asian style wrap for lunch!

Mamma Mia Pasta Salad

1. In a large pot, cook noodles for 10 minutes or until tender, then strain.

2. In a large bowl, combine the noodles, mozzarella, salami, tomatoes, zucchini, broccoli, peppers and dressing until well mixed.

3. Pack the pasta salad up for lunch and buon appetito!

Fun Tip: Chop up your ingredients in bulk and keep them in separate bags for easy meal prep throughout the week. Make fresh noodles the night before you plan to eat the meal and voilà!

Crêpes 101


Pizza Crêpe

  • 1 crêpe
  • Pepperoni, sliced
  • Tomato sauce
  • Mozzarella cheese, shredded
  • Green peppers, sliced

Crêpe Cruncher

  • 1 crêpe
  • Chicken salad
  • Spinach
  • American cheese
  • Potato chips

Mediterranean Crêpe

  • 1 crêpe
  • Hummus
  • Chicken, shredded
  • Cucumber
  • Greek dressing
  • Feta cheese

1. Lay a crêpe flat on a cutting board or countertop.

2. On one half of the crêpe, layer the ingredients.

3. Fold the crepe in half and then again into fourths. Serve for lunch!

Fun Tip: Experiment with seasoning your vegetables like spinach, cucumber or tomatoes with dressing or citrus juice and dried herbs for additional flavor!
