Easy Truffles That Won’t Bake You Crazy

Summer is quickly approaching and that means your kitchen is about to get HOT. For those days when you can’t bear the thought of using an oven but need to satisfy your sweet tooth, these homemade truffles are sure to do the trick. Keep your kitchen cool with not one, not two, but three ways to step up your summer dessert game.

Ingredients

Tiramisu Truffles

  • 24 ladyfingers
  • 2 tbsp sugar
  • 2-3 tbsp espresso ground coffee
  • 2/3 cup mascarpone
  • 1/8 cup coffee
  • Chocolate, melted

Peanut Butter Truffles

  • 3 cups powdered sugar
  • 1/2 cup unsalted butter
  • 1 cup peanut butter
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • Chocolate, melted
  • Peanut butter, melted

Cookie Dough

  • 1/2 cup unsalted butter
  • 1/4 cup sugar
  • 1/2 cup light brown sugar
  • 1 cup all purpose flour
  • 1 tsp vanilla extract
  • 2/3 cup mini chocolate chips
  • Chocolate, melted
  • Cookie crumbs

Directions

Tiramisu Truffles

  1. In a food processor, blend ladyfingers and sugar until ground into a fine powder. Set aside some of the powder to use as garnish later.
  2. In a large bowl, use a hand mixer to combine ladyfingers and sugar mixture with espresso ground coffee, mascarpone and coffee.
  3. Roll the dough into 1 inch balls and refrigerate for 45 minutes to 1 hour.
  4. Dip and cover each tiramisu truffle in melted chocolate, top with the leftover ladyfinger crumbs and enjoy!

Peanut Butter Truffles

  1. In a large bowl, use a hand mixer to combine sugar, butter, peanut butter, vanilla and salt.
  2. Roll the dough into 1 inch balls and refrigerate for 45 minutes to 1 hour.
  3. Dip and cover each peanut butter truffle in melted chocolate, top with melted peanut butter and enjoy!

Cookie Dough Truffles

  1. In a large bowl, use a hand mixer to combine butter, sugar, light brown sugar, flour and vanilla extract. Use a wooden spoon and mix in mini chocolate chips.
  2. Roll the dough into 1 inch balls and refrigerate for 45 minutes to 1 hour.
  3. Dip and cover each cookie dough truffle in melted chocolate, top with cookie crumbs and enjoy!
