From the Shipt Kitchen: Lemon Pound Cake

Every home cook needs a go-to dessert in their repertoire that’s easy, impressive, and, most of all, delicious. This classic iced pound cake should be yours. Every soft bite is layered with hints of lemon and silky sweet icing. 

Bake up this traditional treat and enjoy a thick slice with a dollop of cream or seasonal berries. Warning: You won’t be able to resist a second slice. 

Lemon Pound Cake

What you’ll need:

Bundt cake pan

Hand mixer

Wire cooling rack

Ingredients:

Cake

1 cup salted butter softened

8 ounces cream cheese softened

2 cups sugar

6 large eggs

¼ cup freshly squeezed lemon juice

1 tablespoon lemon zest

1 teaspoon lemon extract

1 teaspoon vanilla extract

3 cups all-purpose flour

Lemon glaze

1 cup confectioners sugar

2 tablespoons milk, or enough to combine

1 tablespoon freshly squeezed lemon juice

1 teaspoon vanilla extract

Directions:

Cake

 1. Preheat the oven to 350ºF. Grease and flour a bundt cake pan.

 2. Add butter and cream cheese to a large mixing bowl. Use a hand mixer to cream together until the mixture is light and fluffy. 

 3. Add sugar to the mixture and beat until smooth.

 4. Add in eggs one at a time, beating after each addition. Use a rubber spatula to mix in lemon juice, lemon zest, lemon extract, and vanilla extract until combined.

 5. Slowly add in flour a little at a time, beating after each addition until the mixture is just combined.

 6. Pour batter into a prepared bundt cake pan and bake at 350ºF for 1 hour and 15 minutes. Bake for up to 1 hour and 30 minutes if the cake is not baked through.

 7. Allow the cake to cool in the pan for 15 minutes before carefully inverting and removing. Allow the cake to cool on a wire rack completely before icing.

Lemon glaze

 1. In a small mixing bowl, whisk together confectioners sugar, milk, lemon juice, and vanilla extract until smooth.

Lemon Pound Cake

 1. Once the cake has cooled completely, slowly drizzle lemon glaze over the cake and allow it to sit at room temperature until the glaze has hardened. Serve and enjoy!
