Spring has finally sprung, and that is a good thing because for many of us it has been a long, long winter. With spring finally here, we wanted to take time to give our favorite season a toast, celebrating its much-appreciated return. Cheers to that! To that end, we thought we’d celebrate with a fun and healthy twist on toast, just like we did last year.
Enter sweet potato toast. Sliced thinly and popped into the toaster (or toasted in the oven on a cookie sheet), sweet potato toast is our favorite new healthy alternative to traditional toast. And bonus: it’s gluten free and a super easy way to sneak in an extra veggie or two.
Here are our favorite sweet potato toast combos — a breakfast version, a pescatarian version, and a vegan version — all guaranteed to get you gushing about the amazing versatility of the sweet potato. So, give these toasts a try and let us know what you think!
Open-Faced Sweet Potato Breakfast Sammy (dairy free)
Add slice of ham to sweet potato toast. Fry an egg in ½ teaspoon of coconut oil and add to sweet potato toast. Season with sea salt and fresh pepper.
SSS Toast (pescatarian)
Spread 1-2 tablespoons goat cheese on sweet potato toast. Add 1 teaspoon capers and a layer of smoked salmon. Top with chopped fresh dill.
Sweet (‘n Green) Potato Toast (vegan)
Make up some fresh guac by roughly mashing one ripe avocado, fresh juice from one lime, pinch of crushed pepper flakes, and sea salt. Add generous scoop to sweet potato toast and top with two tablespoons chickpeas. Sprinkle with freshly ground pepper.
